Hors d'oeuvres and a sampling of handcrafted local spirits and beers will kick start the celebration as guests mingle and watch Chef Kalon Wall tend to the fire and tend to their feast. Ambassadors from Catena wines, grown and crafted at high altitude in Argentina, will carefully pair each course, and the evening will naturally move toward the fires to enjoy dessert.
As you mingle under the open sky, you’ll notice a small herd of cattle quietly grazing on the ranch. You’ll get to talk to local rancher Bill Parker of Parker Pastures, who practices holistic land management and produces sustainably raised beef and lamb in the Valley.
Then, enjoy al fresco dining in the spectacular setting of the Red Dog Ranch at the base of Gibson Ridge. Your meal will be expertly prepared by Chef Kalon Wall, who traveled to train with renowned Argentine Chef Francis Mallmann, featured on the first season of Netflix’s “Chef’s Table” and author of most of the influential books on wood fire cooking, to learn the ancient art of Gaucho-style fire cooking. Mallmann is an expert at cooking over flame, and now Chef Wall will apply these techniques born in the fields of Argentina to the food grown in the fields on the Western Slope and Gunnison.
Feast in the Field is a celebration of local food. The dinner seeks to tell the story of local food and bring people closer to its hardworking makers. Food grown by Parker Pastures, Rain Crown Farm, Thistle Whistle Farm, Delicious Orchards and Mountain Roots are just some of the producers you will learn more about during this personal and rare culinary experience.
